-- yes height field maps are used.

-- there are many color maps developed for representations
of geographic data.  for example, a landscape characterization
map has a set of colors associated with it. This is really true
of any aspect of visulaization whether it is geographic or
another scientific or information arena.  lots of folks who
visualize data like to have color mapping and color picking
capabilities available at the end-user level. This allows for
the visualizer to specify color according to their specific
application needs.
